Corrib County Brown Bread

In 1991, I opened Corrib County Café & Restaurant on the Main St of Oughterard.  It was a place where people came, particularly women to meet, chat and have some home bakes. The corribCounty Brown Bread was a particular favourite. I am happy to share the recipe and to remember the many times CorribCounty was a place to “meet in town”

3oz Plain Flour

2oz Wheat Bran

11oz Coarse Wholemeal (Preferably Howards)

1 tsp Bread Soda

1 tsp Salt

1 Pint of Buttermilk (Mixture should be wet)

2 tbsp Sunflower Oil

Mix all dry ingredients, add buttermilk & Oil.

Oil 2lb Loaf Tin – Put the Mixture into Tin.

Bake 180 degree for 35 – 40 Minutes
