Eggs

Eggs can make a cheap meal and can be used for breakfast, lunch or dinner. If eggs are plentiful I often cook omelettes, frittata or Spanish omelette. I add any ingredients that are available such as onions, bacon, cheese, corn, peas, mushrooms, potatoes, broccoli, ham etc. I saute any raw vegetables first but I often use leftovers from previous meals.The fillings are folded into the centre of omelettes, with frittata and Spanish omelette the added ingredients are mixed with the eggs before the cooking starts. The difference as far as I am concerned the fritatta is cooked for about 30 minutes in the oven while the Spanish omelette is cooked on the frying pan.

They all make tasty filling meals, you can use any ingredients you find in the kitchen or use leftovers.
